It comes from actually tackling the hardest challenges without dying (i.e. The sense of accomplishment doesn't come from getting billions of damage. It requires you to pay attention at all times, and to make sure that you always know what you're dealing with. So I recently made the switch too and HC is a completely different game. Some people get really sad when they lose a character, others find it hilarious and if you think losing items/characters would devastate you I'd stay away from HC. You won't get the same kind of thrill on softcore, but ultimately it just comes down to you as a player/person. I'd put myself somewhat between the two but I definitely have games with friends that we bump it up to difficulties that we probably shouldn't be doing and we end up losing someone or having INSANELY close calls which are absolutely hilarious. Usually in my experience there are 2 kinds of hardcore players - the ones who play very conservatively and rarely die (in which case it's hardly much more exciting than SC) and the ones who kind of tip toe on the line and try to push as high a difficulty as they can before dying. The game doesn't really become more difficult in the traditional sense, it's not like the game itself becomes more difficult but you have to adjust yourself to the fact that a death is permanent meaning there are very few people that run around with very low toughness and high DPS (even those in group play).
